Apple Cinnamon Rice Pudding

Ingredients

3 tbsp45 ml butter

1 apple, peeled, cored & chopped

1 cup250 ml uncooked short grain rice

1/3 cup75 ml raisins

2 cups500 ml unsweetened apple juice

1 tsp5 ml ground cinnamon

1/2 tsp2.5 ml salt

1/2 tsp2.5 ml nutmeg

1 can300 ml Eagle Brand® Regular or Low Fat Sweetened Condensed Milk

Directions

  1 In medium saucepan, melt butter; add chopped apple and cook 2 minutes, stirring constantly. Add rice and cook while stirring, for 1 minute.

  2 Add raisins and ½ cup (125 mL) apple juice; continue stirring for about 1 minute. Add the rest of the apple juice, cinnamon, salt and nutmeg; bring to a boil, stirring occasionally.

  3 Cover and cook 15-20 minutes or until rice is tender.

  4 Add sweetened condensed milk; mix well. Reduce heat to medium and continue stirring until smooth and warmed.

  5 Cool slightly (pudding thickens as it cools). Serve warm, sprinkled with additional cinnamon, if desired. Refrigerate leftovers.
