Apple Cream Crêpes

Ingredients

4 medium-sized tart apples, peeled, cored and finely sliced*

2 tbsp30 ml butter

3/4 tsp3.5 ml ground cinnamon, divided

1 pkg250 g cream cheese, softened

1 can300 ml Eagle Brand® Regular or Low Fat Sweetened Condensed Milk

1 tsp5 ml vanilla extract

Prepackaged crêpes

2 1/2 tbsp37.5 ml chopped pecans, toasted

Directions

  1 Sautée apples in butter and ¼ tsp (1 mL) ground cinnamon, until slightly softened.

  2 Beat cream cheese, sweetened condensed milk and vanilla until smooth.

  3 Spread 1 tbsp (15 mL) mixture down the centre of each crepe; top with about 2 tbsp (30 mL) warm escalloped apples. Roll up, and place, seam side down, in a serving dish.

  4 Stir remaining cinnamon into remaining cream cheese mixture; dollop over filled crêpes, and sprinkle with toasted pecans.

Tip(s)

*Place cut apple slices into a bowl with 2 tbsp (30 mL) lemon juice while slicing, to keep from browning.
