Berry Easy Lemon Mousse

  • Makes: 6-8 portions  
  • Preparation Time: 15 minutes plus chilling time 

Ingredients

1 can300 ml Eagle Brand® Regular or Low Fat Sweetened Condensed Milk

1 tbsp15 ml finely grated lemon rind

1/3 cup75 ml lemon juice

1 cup250 ml light vanilla or plain yogurt

2 cups500 ml light frozen whipped topping, thawed, divided

2/3 cup150 ml fresh blueberries or blackberries

2/3 cup150 ml fresh raspberries

Mint leaves (optional)

Directions

  1 Mix together sweetened condensed milk, lemon rind and lemon juice until smooth.

  2 Stir in yogurt; fold in 1½ cups (375 mL) whipped topping.

  3 Fill individual parfait or dessert dishes with ½ cup of mixture. Chill 3-4 hours.

  4 Just before serving, top with berries and remaining whipped topping.
