Breakfast Trifle

  • Makes: 8 servings  
  • Preparation Time: 15 minutes 

Ingredients

1 1/4 cups300 ml Eagle Brand® Regular or Low Fat Sweetened Condensed Milk

2 cups500 ml thick plain yogurt

¼ cup50 ml lemon juice (juice of 1 lemon)

1 tbsp15ml zest of 1 lemon

1 tsp5 ml vanilla

4 cups1L fruit (sliced strawberries, blueberries, raspberries)

3 cups375 ml granola

Directions

  1 Mix yogurt and condensed milk. Add lemon juice, zest and vanilla. Whip until mixture thickens.

  2 Place 1 cup (250mL) granola in bottom of an 8 cup (2L) bowl. Spoon 2 cups of yogurt mixture.

  3 Layer 2 cups (500mL) fruit, 1 cup (250mL) granola, remaining yogurt mixture, fruit and granola.

Tip(s)

You can make the filling a day ahead but assemble just before using as the granola will lose its crunch. Get the kids involved by helping you layer up the trifle. You can also make this into individual servings. Layer as above in individual bowls.
