Creamy Rice Pudding

  • Makes: 4-6 servings  
  • Preparation Time: 60 minutes 

Ingredients

1 1/2 cups625 ml water

1/2 cup125 ml uncooked long grain rice

1/4 tsp1 ml ground cinnamon

Pinch salt

1 can300 ml Regular or Low Fat Eagle Brand® sweetened condensed milk

1/4 cup50 ml raisins (optional)

Directions

  1 In medium saucepan, combine water, rice, cinnamon and salt; let stand 30 minutes. Bring to a boil, stirring occasionally.

  2 Add Eagle Brand; mix well. Reduce heat to medium. Cook, uncovered, stirring frequently, 20-25 minutes or until liquid is absorbed to top of rice. While still warm, stir in raisins, if desired.

  3 Cool (pudding thickens as it cools).

  4 Serve warm or chilled and sprinkled with additional cinnamon, if desired. Refrigerate leftovers.
