White Chocolate Bread Pudding

  • Preparation Time: 20 minutes plus baking time 

Ingredients

8 cups2 L dry French bread cubes*

1/2 cup each125 ml dried tart cherries, dried cranberries, dried blueberries, raisins or dried currants

2 1/2 cups625 ml water

1 can300 ml Regular or Low Fat Eagle Brand® sweetened condensed milk

3 eggs, beaten

2 tbsp30 ml butter or margarine, melted

2 tbsp30 ml lemon juice

4 squares (1 oz /28 geach) white chocolate, melted

Directions

  1 In 13x9" (3 L) baking dish, stir together bread cubes and dried fruit ; spread evenly in dish.

  2 Combine water, Eagle Brand, eggs, melted butter, lemon juice and melted white chocolate; pour evenly over bread cubes. With spoon, press bread down to moisten completely.

  3 Bake in preheated 350°F (180°C) oven 40 to 50 minutes or until knife inserted in center comes out clean. Serve warm or let cool. Store leftovers covered in refrigerator.
