Macaroon Cookie Bars

These coconutty sweet treats for snacking or after dinner make every day taste like Christmas!

Prep Time: 10 minutes plus baking time
Preheat To: 350ºF (180ºC)
Serving: 24 bars

Ingredients:

2 cups (500 mL) graham crumbs
1/4 cup (50 mL) icing sugar
3/4 cup (175 mL) butter, melted
2 1/2 cups (625 mL) sweetened flaked coconut
1 can (300 mL) Regular or Low Fat Eagle Brand® sweetened condensed milk
2/3 cup (150 mL) semi-sweet chocolate chips
1 tsp (5 mL) vegetable shortening

Preparation:

1.  Combine crumbs with sugar and butter; press evenly onto parchment paper-lined 13 x 9 inch (3 L) baking pan. Top evenly with coconut then Eagle Brand.
2.  Bake in preheated 350°F (180°C) oven for 20-25 minutes or until set but not browned. Remove from oven and cool.
3.  Melt chocolate with shortening. Drizzle over top. Chill and cut into bars.
