Café au Lait Ice Cream
Coffee lovers rejoice. Here’s a frosty, creamy way to enjoy your favourite beverage. A dish of this nut-studded coffee ice cream is great paired with a fresh pot of hot java.
Prep Time: 10 minutes plus freezing time
Serving: 8-10 portions
1/2 cup (125 mL) very hot tap water
4 tsp (20 mL) instant regular or decaffeinated coffee crystals
2 cups (500 mL) whipping cream, whipped
1 can (300 mL) Eagle Brand® Regular or Low Fat Sweetened Condensed Milk
1/4 tsp (1 mL) almond extract
1/2 cup (125 mL) toasted chopped pecans or almonds (optional)
1. In large bowl stir together water and coffee crystals until dissolved; cool to room temperature.
2. Stir in sweetened condensed milk and almond extract. Gently fold in whipped cream and nuts.
3. Pour into an 8" (2 L) square baking pan or 9x5" (2 L) loaf pan. Cover and freeze until firm, about 8 hours.
