Almond Praline Cheesecake

Prep Time: 15 minutes plus baking time
Preheat To: 300º F (150ºC)
¾ cup (175 mL) graham cracker crumbs
1/2 cup (125 mL) slivered almonds, toasted and finely chopped
¼ cup (50 mL) firmly packed brown sugar
1/4 cup (50 mL) butter, melted
3 pkgs (250 g each) cream cheese, softened
1 can (300 mL) Regular or Low Fat Eagle Brand® sweetened condensed milk
1 tsp (5 mL) almond extract
*Almond Praline Topping (recipe follows)
1. Combine graham cracker crumbs, almonds, sugar and butter; press firmly on bottom of 9" (23 cm) springform pan.
2. Beat cream cheese until fluffy. Gradually beat in Eagle Brand until smooth. Add eggs and extract; mix well. Pour into prepared pan.
3. Bake in preheated *300º F (150ºC) oven 55 to 60 minutes or until centre is set. Cool. Top with Almond Praline Topping. Chill. Store leftovers covered in refrigerator.
Notes:*Almond Praline Topping: In small saucepan, combine 1/3 cup firmly packed dark brown sugar and 1/3 cup whipping cream. Cook and stir until sugar dissolves. Simmer 5 minutes or until thickened. Remove from heat; stir in 1/2 cup chopped,toasted slivered almonds. Spoon evenly over cake. (For 13x9" pan, double all topping ingredients; simmer 10 to 12 minutes or until thickened).
