White Chocolate Almond Bark
This super simple recipe makes it easy to give professional looking gifts to family and friends… lovingly homemade.
Prep Time: 10 minutes plus chilling time
Serving: about 1.5 kg
1 1/2 lbs (680 g) of vanilla-flavoured candy coating* or white chocolate
1 can (300 mL) Regular Eagle Brand® sweetened condensed milk
1/8 tsp (0.5 mL) salt
1 tsp (5 mL) almond extract
3 cups (750 mL) whole almonds, toasted
1. Over low heat, melt candy coating. Do not overstir. Add Eagle Brand and salt and lightly stir. Remove from heat; stir in extract, then almonds.
2. Spread evenly into parchment paper-lined 15x10" jellyroll pan. Chill 2 hours or until firm. Turn onto cutting board; peel off paper and cut into small triangles or squares. Store tightly covered at room temperature.
Notes:Microwave: In 2 L glass measure, combine candy coating, Eagle Brand and salt. Cook on 100% power (high) 3 to 5 minutes, stirring at one minute intervals until smooth. Proceed as above. *Also called confectioners’ coating and available in bulk food stores *3 cups (750 mL)
