Apple Butterscotch Cookies
Clusters of autumn goodness with the sweet burst of butterscotch.
Prep Time: 10 minutes plus baking time
Preheat To: 350ºF (180ºC)
Serving: 4 dozen
2 tbsp (30 mL) lemon juice
1 tsp (5 mL) ground cinnamon
2 cups (500 mL) chopped dried apples
2 cups (500 mL) quick cooking oats
1/4 cup (50 mL) unsifted flour
1/2 cup (125 mL) butterscotch-flavoured chips
1 can (300 mL) Regular or Low Fat Eagle Brand® sweetened condensed milk
1. In small bowl, sprinkle lemon juice and cinnamon over apples; toss. Set aside.
2. In large bowl, combine oats and flour. Add apple mixture, butterscotch chips and Eagle Brand; mix well. Drop by rounded teaspoonfuls onto greased or parchment paper-lined baking sheets.
3. Bake in preheated 350ºF (180ºC) oven 8 to 10 minutes or until lightly browned. Immediately remove from baking sheet. Store loosely covered.
