Holiday Jewel Triangles
These festive treats shimmer with the colours of the season and are bursting with the sweet taste of holidays with family and friends.
Prep Time: 15 minutes plus baking time
Preheat To: 350ºF (180ºC)
Serving: 2 1/2 dozen triangles
Ingredients:
1/2 cup (125 mL) butter, softened
1/2 cup (125 mL) sugar
1 egg
1 tsp (5 mL) vanilla
2 1/4 cups (550 mL) all purpose flour
1 can (300 mL) Regular or Low Fat Eagle Brand® sweetened condensed milk
1/4 cup (50 mL) orange juice
1 1/4 cups (300 mL) chopped pecans
1 1/4 cups (300 mL) sweetened flaked coconut
2/3 cup each (150 mL each) chopped red and green glacé cherries
Preparation:
1. Cream butter, sugar, egg and vanilla until light and creamy. Gradually add flour, mixing until crumbly. Press firmly onto parchment paper-lined 15 x 10 inch (2 L) jelly roll pan. Bake in preheated 350°F (180°C) oven for 5-6 minutes and set aside.
2. Stir together Eagle Brand, orange juice, pecans, coconut and cherries. Spread evenly over prepared crust.
3. Bake 20-25 minutes longer. Cool thoroughly and chill before cutting.
