Orange Cranberry Ice Cream
Cranberry lovers rejoice - a whole bag of fresh cranberries in this orange-y ice cream! A cool tangy treat to enjoy this fall.
Prep Time: 15 minutes plus chilling and freezing time
Serving: 4 cups (1 L)
1 bag (12 oz / 340 g) fresh or frozen cranberries
3/4 cup (175 mL) sugar
1/4 cup (50 mL) water
1/2 cup (125 mL) frozen concentrated orange juice, thawed
1 can (300 mL) Regular Eagle Brand® Sweetened Condensed Milk, chilled
2 cups (500 mL) whipping cream
1 tsp (5 mL) orange zest (optional)
1. Combine cranberries, sugar and water in saucepan. Bring to a boil, reduce heat and simmer 10 minutes. Cool. Refrigerate until very cold.
2. Whisk thawed concentrated orange juice together with sweetened condensed milk and whipping cream.
3. Freeze in ice cream maker according to manufacturer's directions. During the last few minutes of freezing, add cranberries and orange zest. Freeze.
