Butterscotch Chip Cookie Cheesecake Bites Recipe

You get the crunch of a cookie with the creamy texture of cheesecake. It’s perfect to have on hand anytime expected and unexpected guests drop by.

Bake Time: 30 minutes
Serving: 25 bites


Cookie Dough
½ cup (125mL) butter, softened
½ cup (125mL) Eagle Brand® Dulce de Leche Caramel Flavoured Sauce
¼ cup (50mL) brown sugar, packed
1 egg
1 tsp (5mL) pure vanilla extract
1 ¾ cups (425mL) Robin Hood® All Purpose Flour
1 tsp (5mL) baking powder
1 cup (250mL) butterscotch chips
Cheesecake Filling
1 pkg (250g) cream cheese, softened
2/3 cup (150mL) Eagle Brand Dulce de Leche Caramel Flavoured Sauce
¼ cup (50mL) plain yogurt or sour cream
1 egg
2 tbsp (30mL) Robin Hood All Purpose Flour
1 tsp (5mL) pure vanilla extract


1.  Preheat oven to 350°F (180°C). Line a 9” x 9” (2L) baking dish with parchment paper, overlapping 2 sides for easy removal from pan.

Cookie Dough:
2.  Beat butter, caramel flavoured sauce and brown sugar until well combined. Add egg and vanilla, beat well. Add flour and baking powder, beat just until dough is combined. Mix in butterscotch chips. Press 1 ½ cups (375mL) dough in prepared pan. Reserve remaining dough for topping.

3.  Beat cream cheese and remaining caramel sauce until smooth. Beat in remaining ingredients. Pour mixture over base. Drop reserved dough on top of mixture. Do not worry if some of the cheese mixture shows through.
Bake in preheated oven for 30 minutes or just until topping is golden and cheesecake is firm to the touch. Chill 4 hours or overnight in refrigerator before serving. Cut into 1" (2.5cm) pieces.


Keep extra Eagle Brand Dulce de Leche Caramel Flavoured Sauce to drizzle over bites before serving. Refrigerate extra caramel sauce in an air tight container. For a quick dessert you can drizzle over yogurt and fruit or simply use as a dipping sauce for fruit.

I was looking for a decadent treat but was very disappointed with this recipe. Perhaps not baking until the topping is golden brown might have helped. But otherwise it was very dry and bland tasting.
