Apple Crumble Cream Cheese Squares
Ingredients
- Crust:
- 1 1/2 cups (375 mL) all-purpose flour
- 1 cup (250 mL) quick-cooking oats
- 1/2 cup (125 mL) white sugar
- 1/4 cup (50 mL) brown sugar
- 1 tsp (5 mL) baking soda
- 1/2 tsp (2 mL) salt
- 1 cup (250 mL) butter
- Apple Layer:
- 8 cups (2 L) peeled, cored and thinly sliced apples (Golden Delicious, Northern Spy or Cortland)*
- 1 1/2 tsp (7 mL) lemon juice
- 1/2 cup (125 mL) water
- 1/2 cup (125 mL) white sugar
- 1/4 cup (50 mL) brown sugar
- 3 tbsp (45 mL) cornstarch
- 1 1/2 tsp (7 mL) cinnamon
- 1/2 tsp (2 mL) salt
- 1/4 tsp (1 mL) nutmeg
- Cream Cheese Layer:
- 1 can (300 mL) Original or Low Fat Eagle Brand® Sweetened Condensed Milk
- 1 pkg (8 oz / 225 g) cream cheese
- 1 tsp (5 mL) vanilla extract
- 2 eggs
- 2 tbsp (30 mL) all purpose flour
- 2 tsp (10 mL) lemon juice
Directions
Crust:
Step 1:
Pulse all ingredients together except butter in food processor. Add butter and pulse until mixture resembles coarse meal. Reserve 1 1/2 cups (375 mL) for topping. Press remaining filling into parchment lined 13" x 9" (3.5 L) pan. Bake in preheated 350ºF (180ºC) oven for 10 minutes.
Apple Layer:
Step 2:
Toss apples with lemon juice. Combine with remaining apple layer ingredients in large saucepan and bring to a boil, stirring occasionally. Reduce heat to medium low and cook until apples are tender (about 5 minutes). Cool completely.
Cream Cheese Layer:
Step 3:
Beat all ingredients together with electric mixer or food processor until smooth.
Assemble and Bake:
Step 4:
Pour cream cheese layer over pre-baked crust. Top with apples. Sprinkle reserved crust ingredients over apples and bake for 40 minutes or until set. Cool. Cut into squares.
