Apricot Coconut Squares

Ingredients
- 1/2 cup (125 mL) butter
- 2/3 cup (150 mL) sugar
- 1/4 cup (50 mL) cocoa
- 1 egg
- 1 1/4 cups (300 mL) all-purpose flour
- 1 can (300 mL) Eagle Brand® Original or Low Fat Sweetened Condensed Milk
- 1 1/3 cups (325 mL) flaked coconut
- 1 cup (250 mL) coarsely chopped almonds
- 1 cup (250 mL) diced dried apricots
Directions
Step 1:
Beat butter, sugar, cocoa and egg until smooth. Stir in flour, mixing until well blended. Press firmly on bottom of 13" x 9" (3.5 L) baking pan.
Step 2:
Bake in preheated oven 350°F (180°C) for 10 minutes.
Step 3:
Meanwhile, combine condensed milk, coconut, almonds and apricots; mix well. Spread evenly over prepared crust.
Step 4:
Bake an additional 20 to 25 minutes or until lightly browned. Cool well before cutting. Store loosely covered at room temperature.
Tip
If apricots are very dry, soak them in boiling water for a few minutes to soften. Dry them completely before mixing with other ingredients.
