Chocolate Oatmeal Mini Macaroons

Ingredients

  • 4 large eggs
  • 1 cup (250 mL) granulated sugar
  • 1/4 cup (50 mL) unsweetened dark cocoa powder, sifted
  • 2 tsp (10 mL) vanilla extract
  • 1 can (300 mL) Original Eagle Brand® Sweetened Condensed Milk
  • 1 1/2 cups (375 mL) unsweetened flaked coconut
  • 1 cup (250 mL) quick cooking rolled oats
  • icing sugar (optional)
  • unsweetened cocoa powder (optional)

Directions

Step 1:

In large bowl, beat eggs on medium speed for 30 seconds. Add sugar, cocoa powder, vanilla and sweetened condensed milk, beating well after each addition. Stir in coconut and oats.

Step 2:

Spoon into very well greased and floured mini muffin tins 2/3 full. Bake in centre of preheated 375°F (190°C) oven 15-20 minutes or until firm. Cool, and then remove from muffin tins.

Step 3:

Garnish with icing sugar and cocoa powder if desired. Store at room temperature in airtight container.
