Cranberry Cheesecake Bars

Ingredients
- 3/4 cup plus 1 tbsp (190 mL) firmly packed brown sugar
- 1 cup (250 mL) butter, softened
- 2 cups (500 mL) all-purpose flour
- 1 1/2 cups (375 mL) large flake oats
- 1 pkg (250 g) cream cheese, softened
- 1 can (300 mL) Original or Low Fat Eagle Brand® Sweetened Condensed Milk
- 1/4 cup (50 mL) lemon juice
- 1 can (398 mL) whole cranberry sauce
- 2 tbsp (30 mL) cornstarch
Directions
Step 1:
Cream together 3/4 cup (175 mL) sugar and butter until fluffy. Add flour and oats, mixing until crumbly. Set aside 1 1/2 cups (375 mL); press remaining mixture on bottom of parchment paper-lined 13" x 9" (3 L) baking pan. Bake in preheated 350°F (180°C) oven 15 minutes or until lightly browned.
Step 2:
Meanwhile, beat cream cheese until fluffy. Gradually beat in Eagle Brand until smooth, stir in lemon juice. Spread over baked crust. Combine cranberry sauce, cornstarch and remaining 1 tbsp sugar. Spoon over cheese layer. Top with reserved crumb mixture.
Step 3:
Bake 45 minutes longer, or until golden. Cool and cut into bars. (Refrigerate leftovers.)
