Ingredients
- 1 cup (250 mL) butter
- 1 cup (250 mL) sugar
- 2 eggs
- 1 can (300 mL) Eagle Brand® Original or Low Fat Sweetened Condensed Milk
- 4 tbsp (60 mL) lemon juice
- 2 tbsp (30 mL) grated lemon rind
- 2 tsp (10 mL) vanilla extract
- 5 cups (1.25 L) all purpose flour
- 4 tsp (40 mL) baking powder
- 1 tsp (5 mL) salt
Directions
Step 1:
Cream the butter and sugar. Add the eggs, Eagle Brand, lemon juice, rind and vanilla and mix until blended.
Step 2:
Sift together flour, baking powder and salt. Add to creamed mixture and mix well. Divide dough into 3 balls. Wrap in plastic and refrigerate 4 hours (or up to 2 days).
Step 3:
Roll each ball out to 1/4” (.5 cm) thick and cut into desired shapes. Or, form into a roll and slice into 1/4” (.5 cm) rounds.
Step 4:
Bake in preheated 350°F (180°C) oven for 10-12 minutes. Cool on a rack.
