Maple Scented Banana Bread

Ingredients
- Dry Ingredients:
- 2 1/2 cups (625 mL) all-purpose flour
- 1 tbsp (15 mL) baking powder
- 1/2 tsp (2.5 mL) baking soda
- 1/2 tsp (2.5 mL) salt
- Wet Ingredients:
- 3/4 cup (175 mL) unsalted butter, softened
- 1/3 cup (75 mL) packed brown sugar
- 3 large eggs
- 1 can (300 mL) Original or Low Fat Eagle Brand® Sweetened Condensed Milk
- 2/3 cup (150 mL) pure maple syrup
- 2 cups (500 mL) pureed ripe bananas* (about 4 large bananas)
Directions
Step 1:
Sift dry ingredients together; set aside.
Mix wet ingredients:
Step 2:
With electric mixer, cream butter and brown sugar together. Add eggs, one at a time, beating well after each addition. Add remaining ingredients in order, beating well after each addition.
Step 3:
With electric mixer on low speed, fold dry ingredients into wet ingredients, beating just until smooth.
Step 4:
Pour batter into two greased and floured (or non-stick) 8 1/2" x 4 1/2" (1.5 L) loaf pans. Bake until toothpick inserted in center comes out clean, about 45-50 minutes. Remove from pans and cool completely on wire racks. Store covered in plastic wrap at room temperature or freeze up to three months.
