No Bake Chocolate Pecan Brownie

Ingredients
- Brownie:
- 2 cups (500 mL) semi-sweet chocolate, chopped or semi-sweet chocolate chips
- 1/4 cup (50 mL) butter
- 2 cups (500 mL) store bought chocolate chip cookies, crushed (about 16 cookies)
- 1 cup (250 mL) chopped toasted pecans
- 1 can (300 mL) Eagle Brand® Original or Low Fat Sweetened Condensed Milk
- 1 tsp (5 mL) vanilla extract
- Topping:
- 1/2 cup (125 mL) chopped toasted pecans
Directions
Step 1:
Line a 8” x 12” (2.2 L) baking pan with parchment
Step 2:
Place a double boiler over hot water, melt chocolate and butter until smooth, stirring occasionally.
Step 3:
Combine chocolate chip cookies crumbs and pecan. Stir in sweetened condensed milk and vanilla until crumbs are moistened. Add in melted chocolate until combined.
Step 4:
Press evenly into prepared baking pan. Sprinkle top with pecans. Let stand at room temperature for 2 hours before cutting into squares.
Tips
Toasting pecans enhances the flavour of the nut.
Preheat oven to 350ºF (180ºC). Place pecans on baking sheet and bake for 10 to 12 minutes.
To make cookie crumbs, place cookies in a plastic storage bag and roll with a rolling pin.
