Ingredients

  • 1/4 cup (50 mL) graham cracker crumbs
  • 2 pkgs (250 g each) low fat or fat free cream cheese
  • 1 can (300 mL) Low Fat Eagle Brand® Sweetened Condensed Milk
  • 4 egg whites
  • 1 egg
  • 1/3 cup (75 mL) lemon juice
  • 1 tsp (5 mL) vanilla extract
  • 1/4 cup (50 mL) sifted flour
  • 1 cup (250 mL) assorted fresh fruit or berries

Directions

Step 1:

Sprinkle crumbs over bottom of greased 8" (20 cm) springform pan.

Step 2:

In mixer bowl, beat cream cheese until fluffy; gradually beat in Eagle Brand until smooth. Add egg whites, whole egg, lemon juice, and vanilla; mix well. Stir in flour.

Step 3:

Pour into prepared pan. Bake in preheated 300°F (150°C) oven 45-50 minutes or until centre is set. (Centre will spring back when lightly touched). Cool, chill.

Step 4:

Top with fresh fruit or berries.
