Apple Cinnamon Rice Pudding

Ingredients

  • 3 tbsp (45 mL) butter
  • 1 apple, peeled, cored & chopped
  • 1 cup (250 mL) uncooked short grain rice
  • 1/3 cup (75 mL) raisins
  • 2 cups (500 mL) unsweetened apple juice
  • 1 tsp (5 mL) ground cinnamon
  • 1/2 tsp (2.5 mL) salt
  • 1/2 tsp (2.5 mL) nutmeg
  • 1 can (300 mL) Eagle Brand® Original or Low Fat Sweetened Condensed Milk

Directions

Step 1:

In medium saucepan, melt butter; add chopped apple and cook 2 minutes, stirring constantly. Add rice and cook while stirring, for 1 minute.

Step 2:

Add raisins and 1/2 cup (125 mL) apple juice; continue stirring for about 1 minute. Add the rest of the apple juice, cinnamon, salt and nutmeg; bring to a boil, stirring occasionally.

Step 3:

Cover and cook 15-20 minutes or until rice is tender.

Step 4:

Add sweetened condensed milk; mix well. Reduce heat to medium and continue stirring until smooth and warmed.

Step 5:

Cool slightly (pudding thickens as it cools). Serve warm, sprinkled with additional cinnamon, if desired. Refrigerate leftovers.
