Creamy Rice Pudding

Ingredients
- 1 1/2 cups (375 mL) water
- 1/2 cup (125 mL) uncooked long grain rice
- 1/4 tsp (1 mL) ground cinnamon
- pinch salt
- 1 can (300 mL) Original or Low Fat Eagle Brand® Sweetened Condensed Milk
- 1/4 cup (50 mL) raisins (optional)
Directions
Step 1:
In medium saucepan, combine water, rice, cinnamon and salt; let stand 30 minutes. Bring to a boil, stirring occasionally.
Step 2:
Add Eagle Brand; mix well. Reduce heat to medium. Cook, uncovered, stirring frequently, 20-25 minutes or until liquid is absorbed to top of rice. While still warm, stir in raisins, if desired.
Step 3:
Cool (pudding thickens as it cools).
Step 4:
Serve warm or chilled and sprinkled with additional cinnamon, if desired. Refrigerate leftovers.
