White Chocolate Bread Pudding

Ingredients

  • 8 cups (2 L) dry French bread cubes*
  • 1/2 cup each (125 mL) dried tart cherries, dried cranberries, dried blueberries, raisins or dried currants
  • 2 1/2 cups (625 mL) water
  • 1 can (300 mL) Original or Low Fat Eagle Brand® Sweetened Condensed Milk
  • 3 eggs, beaten
  • 2 tbsp (30 mL) butter or margarine, melted
  • 2 tbsp (30 mL) lemon juice
  • 4 squares (1 oz / 28 g each) white chocolate, melted

Directions

Step 1:

In 13" x 9" (3 L) baking dish, stir together bread cubes and dried fruit; spread evenly in dish.

Step 2:

Combine water, Eagle Brand, eggs, melted butter, lemon juice and melted white chocolate; pour evenly over bread cubes. With spoon, press bread down to moisten completely.

Step 3:

Bake in preheated 350°F (180°C) oven 40 to 50 minutes or until knife inserted in center comes out clean. Serve warm or let cool. Store leftovers covered in refrigerator.
