Apple Oatmeal Cinnamon Muffins

Ingredients
- Dry Ingredients:
- 2 1/2 cups (625 mL) Robin Hood® All Purpose Flour
- 1 cup (250 mL) Robin Hood® Regular or Quick Cooking Oats
- 1 tbsp (15 mL) baking powder
- 2 tsp (10 mL) ground cinnamon
- 1 tsp (5 mL) baking soda
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) nutmeg
- 1/4 tsp (1 mL) allspice
- Wet Ingredients:
- 1 cup (250 mL) unsalted butter, softened
- 3/4 cup (175 mL) packed brown sugar
- 3/4 cup (175 mL) white sugar
- 4 large eggs
- 1 1/2 tsp (7 mL) vanilla extract
- 1 can (300 mL) Eagle Brand® Original or Low Fat Sweetened Condensed Milk
- 1 cup (250 mL) unsweetened applesauce
- 1 1/2 cups (375 mL) coarsely grated peeled apples (from about 3 apples, Golden Delicious or Cortland work best)
Directions
Step 1:
In large bowl, stir all dry ingredients together; set aside.
Step 2:
With electric mixer on medium speed, cream butter and both sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla, sweetened condensed milk and applesauce.
Step 3:
Reduce speed to low, and slowly add dry ingredients mixing just until smooth. Gently fold in apples.
Step 4:
Pour batter into greased, non stick or paper lined muffin cups. Bake in preheated 325°F/160°C oven until center of muffins bounce back when lightly touched, about 16-20 minutes. Remove muffins from pan and cool on wire rack.
