Ingredients

  • 1 can (300 mL) Eagle Brand® Original or Low Fat Sweetened Condensed Milk
  • 1/2 cup (125 mL) brown sugar
  • 1/2 cup (125 mL) Canola or Vegetable Oil
  • 2 eggs
  • 1/2 cup (125 mL) plain yogurt
  • 4 about 2 cups / 500 mL ripe bananas, mashed
  • 2 tsp (10 mL) vanilla extract
  • 2 cups (500 mL) Robin Hood® Nutri™ Flour Blend
  • 1 tsp (5 mL) baking powder
  • 3/4 tsp (4 mL) baking soda
  • 1 cup (250 mL) semi-sweet chocolate chips (optional)

Directions

Step 1:

Preheat oven to 375ºF (190ºC). Grease or line a 12 cup muffin pan with paper liners.

Step 2:

Beat sweetened condensed milk, brown sugar and oil until combined. Add eggs, one at a time, beating well after each additions. Beat in yogurt, mashed bananas and vanilla extract. Stir in remaining ingredients.

Step 3:

Place batter in prepared pan. Bake 18 minutes or until a toothpick inserted in center comes out clean. Cool.
