Strawberry Lemon Meringue Pie

Ingredients

  • 3 eggs, separated
  • 1 can (300 mL) Eagle Brand® Original or Low Fat Sweetened Condensed Milk
  • 1/2 cup (125 mL) lemon juice
  • 1 tbsp (15 mL) lemon zest
  • 1 9” / 23 cm baked pastry shell or prepared graham pie crust
  • 2 cups (500 mL) strawberries, sliced
  • 1/4 tsp (1 mL) cream of tartar
  • 1/4 cup (50 mL) sugar

Directions

Step 1:

Preheat oven to 325ºF (160ºC).

Step 2:

Beat egg yolks, whisk in sweetened condensed milk, lemon juice and lemon zest. Pour into prepared crust.

Step 3:

Bake in preheated oven 25 minutes. Remove from oven. Increase oven temperature to 350ºF (180ºC).

Step 4:

Place sliced strawberries over baked filling.

Step 5:

Beat egg whites with cream of tartar until foamy; gradually add sugar beating until stiff peaks form but not dry. Spread meringue on top of strawberries, sealing carefully to edge of crust.

Step 6:

Return to oven and bake for 10 minutes or until meringue is golden brown. Cool. Chill before serving, if desired.
