Sweet Potato Pie

Ingredients
- 1 9” / 23 cm unbaked pastry shell
- 1 lb (454 g) sweet potatoes, cooked and peeled
- 1/4 cup (50 mL) butter
- 1 can (300 mL) Original or Low Fat Eagle Brand® Sweetened Condensed Milk
- 1 tsp (5 mL) grated orange rind
- 1 tsp (5 mL) vanilla
- 1 tsp (5 mL) ground cinnamon
- 1 tsp (5 mL) ground nutmeg
- 1/4 tsp (1 mL) salt
- 2 eggs
Directions
Step 1:
Beat sweet potatoes and butter until smooth. Add Eagle Brand, orange rind, vanilla, cinnamon, nutmeg, salt and eggs; mix well. Pour into pie shell.
Step 2:
Bake in preheated 350°F (180ºC) oven 30 minutes or until golden brown. Cool. Garnish as desired.
