Banana Bread Muffins

Ingredients

1 can300ml Eagle Brand® Regular or Low Fat Sweetened Condensed Milk

½ cup125ml brown sugar

½ cup125ml Crisco® Canola or Vegetable Oil

2 eggs

½ cup125ml plain yogurt

4about 2 cups/500ml ripe bananas, mashed

2 tsp10ml vanilla extract

2 cups500ml Robin Hood® Nutri™ Flour Blend

1 tsp5ml baking powder

¾ tsp4ml baking soda

1 cup250ml semi-sweet chocolate chips (optional)

Directions

  1 Preheat oven to 375ºF (190ºC). Grease or line a 12 cup muffin pan with paper liners.

  2 Beat sweetened condensed milk, brown sugar and oil until combined. Add eggs, one at a time, beating well after each additions. Beat in yogurt, mashed bananas and vanilla extract. Stir in remaining ingredients.

  3 Place batter in prepared pan. Bake 18 minutes or until a toothpick inserted in center comes out clean. Cool.
