Oatmeal Raisin Snack Cake

Ingredients

1 cup250ml butter, softened

¾ cup175ml brown sugar

2 eggs

2 tsp10ml vanilla extract

1 can300ml Eagle Brand® Regular or Low Fat Sweetened Condensed Milk

2 cups500ml Robin Hood® or Old Mill® Oats

2 cups500ml Robin Hood® All Purpose Flour

2 tsp10ml baking powder

1 ½ cups375ml raisins

1 cup250ml semi-sweet chocolate chips

Directions

  1 Preheat oven to 350ºF (180ºC). Grease and line a 9” x 9” (2.5L) baking dish with parchment paper, overlapping 2 sides for easy removal.

  2 Cream butter and brown sugar until smooth. Add eggs, vanilla extract and sweetened condensed milk, beating until incorporated. Gradually add oats, flour and baking powder, beating until combined. Add raisins.

  3 Press half the dough into prepared dish. Sprinkle with chocolate chips. Top with remaining dough.

  4 Bake in preheated oven 45 minutes or until a toothpick inserted in center comes out clean. Cool and cut into squares.
